BryndaLee’s isn’t one person — it’s us. The name is made from Nana’s and Papaw’s full names — first, middle, and last — so our life together is literally in it. Everything we make starts at our family table — the recipes, the care, and the life we built together — and we wanted that carried in every single jar.
We cold-smoke our jalapeños using a smoke tube and carefully selected wood pellets — not cut wood. This method lets us add rich, layered smoke without cooking the peppers, so they stay crisp and true to the recipe. We’ve dialed in the timing to get just the right balance — enough smoke to bring depth and character, without overpowering the flavor. The goal is simple: you should taste the smoke, not feel like you’re breathing it.
Nana: That’s a hard one — they’re all unique. But if I had to choose, I’d say the Jalaberry Pepper Jam. It’s incredibly versatile — great for breakfast, dessert, or turned into a syrup or dip. Jalapeño poppers with that jam are hard to beat. Papaw: I can’t decide! I love them all! I think my go-to is Pepper Caps. I love them on everything! I think the best way I love them is with black olives.
For years, this was simply our way of life — canning season after season for our family, with no name and no intention beyond putting good food away and sharing it with the people we loved. As our family kept encouraging us, and those jars started making their way to friends, neighbors, and gatherings, we heard the same thing again and again: you REALLY should start selling this! That shift — from sharing to being encouraged — is what made us pause and say, maybe we can. And once we did, BryndaLee’s came to life.
We use them the same way we always have — wherever they fit naturally. Sometimes they’re part of the dish, and sometimes they’re that finishing touch that makes someone stop and say, “What was that?” From simple snacks to full meals, there are all kinds of ways to enjoy them. Papaw and I genuinely love this work — but more than anything, we love doing it together. We work seamlessly as a team. We know our rhythm, our routines, and what comes next in each recipe. We rely on each other’s strengths, and that partnership is the best part of building BryndaLee’s.
The difference is in how we make it. We focus on balance — small batches, real ingredients, and hands-on care at every step. Over time, we’ve thoughtfully adjusted our recipes, including reducing excess sweetness where we can, so they’re still bold and flavorful without being overdone. Our spice blends are chosen intentionally, pairing ingredients that complement one another so the flavor works naturally. Everything is made with thought, restraint, and respect for the people who will be eating it.
We hope it’s memorable — something that stands out and makes people want it again. If it brings a smile, sparks a memory of a favorite dish, or reminds someone of food they grew up loving, even better. And if it becomes part of someone else’s journey — at home, in a kitchen, or on a menu — then it’s done exactly what we hoped it would do.
Our vision is to grow without losing our footing. We want BryndaLee’s to expand thoughtfully while staying grounded in family, tradition, and doing things the right way. The Western spirit may shape how we look, but the heart of our vision is preserving what matters — honest food, shared moments, and a way of life worth passing on.
